Happy weekend, folks! This week's meal plan is brought to you by the great meat sale at Safeway this week. While I don't have any soups this week, I have primarily casseroles, so I'm still not using a lot of meat. I use this mushroom broth, with a roux, as a substitute for condensed cream of mushroom soup. While a simple roux of cornstarch and water does the job, if you make your roux with butter, flour and half and half you will get a creamier, tastier substitute for that canned soup, and the cost is really reduced over buying the canned version.
